We thinks this works especially well as a fresh and healthy summer salad idea or maybe a vegan side salad idea! Super satisfying and super easy salad recipe, two of our very favourite things.

For the sauce

<item-todo-done>3 tbsp olive oil<item-todo-done><item-todo-done>1 tbsp plant-based mayonnaise<item-todo-done><item-todo-done>2 tbsp plant-based butter<item-todo-done><item-todo-done>3 avocados<item-todo-done><item-todo-done>80ml plant-based milk<item-todo-done><item-todo-done> salt to taste<item-todo-done><item-todo-done>2 lemons juice of<item-todo-done>


For the salad

<item-todo-done> small bunch of fresh coriander<item-todo-done><item-todo-done>1 red chilli<item-todo-done><item-todo-done>150g cherry tomatoes<item-todo-done><item-todo-done>1 red onion<item-todo-done><item-todo-done>400g cooked potatoes<item-todo-done>

Before you start

Powerful blender

Make the sauce

  • Using your blender, whizz up all the sauce ingredients until you have a well-blended sauce

Mix the salad and serve

  • Pour the sauce over the pre-cooked potatoes
  • Add the onion, tomatoes, chilli and coriander
  • Mix well and serve
